    If I cook this again, I might shoot for a firmer eggplant

    Loved this dish. I made it with quinoa but I think on a bed of rice would have been perfection. Also I left out the spinach because I didn't have any but it would have been a nice touch. I used fresh tomatoes from the garden and it was so delicious.

    It wasn’t a bad dish, but it was very liquidy... To be fair, I may just not like eggplant or have used to much! I would make this again and try substituting mushrooms - good flavor.

    Super tasty, healthy and low calorie dish at the same time. Used fresh tomatoes and it was a delish!

    This turned out well! I don't care for eggplant but this dish has so much flavor, the eggplant is not too strong. I didn't have spinach, but really didn't miss it. I'll try it again!

    It turned out great! I improvised it a little by adding chicken stock... Highly recommeded to those who are on a diet. Looking forward to make this again with other different veggies
