- 1 lb. boneless, skinless chicken breasts (diced into 1-inch cubes)
- 1 Tbsp. canola oil
- salt
- freshly ground black pepper
- 4 green onions (chopped, keep lighter and darker portions separate)
- 2 cloves garlic (minced)
- 1 1/2 cups chicken broth (low-sodium)
- 4 oz. chopped green chilies
- 2 tsp. lime zest
- 3 Tbsp. lime juice
- 14.5 oz. black beans (rinsed and well drained)
- 2 cups Minute White Rice (don't use regular rice!)
- 1/3 cup chopped cilantro

Delicious - made chicken in instant pot with water for 12 min (three small breasts). Made as burritos with sour cream, salsa and avocado

Amazing flavors, I used 1/4 cup pearl couscous instead of rice, it was fabulous.

Awesome! Full of flavor and very satisfying. Made using brown rice, so had to let it sit for a few more minutes. Will definitely make again!

I used normal rice. Added a bit more water...it came out great, very tasty! Now I don't have to go to the cuban restaurant as much!

Simple and tasty recipe. I cut the rice in half as someone had suggested but I think next time I would use the full amount.

This was a quick and easy recipe. For my family I think I might cut the amount of rice in half and add a handful of corn to the skillet.

Very good. Next time I will serve with pico de Gallo or put in diced tomato. Needed a little more color. Topped with sour cream.

It's now one of my go to dishes. I add more green chilis, lime and cilantro than called for. Delicious!

I modified it somewhat using long grain rice. since it oils take longer to cook I left the boneless skinless chicken thighs and browned them and removed it from the pan. I substituted red pepper flakes for the green chilies. I then added the broth and the other ingredients except the beans and cilantro. I added the chicken back on top of the rice mixture covered it and cooked for 15 minutes. I then added the black beans to the top and cooked until the liquid was all absorbed. When the rice was done, I stirred in the cilantro and served.. It was fantastic I will do it again.

This dish was quick and easy, and very delicious, but I managed to over cook the chicken. :(

Amazing! I cooked Brown Basmati Rice in a rice cooker and added the cooked rice in worked like a charm and added some nutrition.

I used brown rice and cooked it before and it still soaked in pretty well. So delicious in a wheat tortilla!

I used regular rice instead of minute rice so the process changed a bit, but over all it was amazing!

I added pico, cheese, and sour cream once finished cooking. Also made with brown rice. Excellent dish!

Stirred in some frozen corn to up the veggie factor and my family loves it.
