This was much better than I expected - I needed a fast dinner and had leftover chicken, so a pleasant surprise! Tweaks: I used half the recommended salt, and added a drained can of black beans. I think sautéing the rice before adding the liquid was key, and I put the spices in the rice as it sautéed (instead of later on with the liquid). All the peppers were from our garden (no canned). I only put sour cream at the end as a garnish (mixed with some lime juice and then drizzled fancy restaurant style). Will definitely make again.
