- 1/2 cup diced onion
- 4 cloves garlic (minced)
- 2 Tbsp. fresh ginger (minced or grated, skin removed)

- 15 oz. chickpeas (thoroughly rinsed and drained)
- 3 1/2 Tbsp. green curry paste (this was about a half jar of the Thai Kitchen brand--reduce if you like things very mild)
- 15 oz. coconut milk
- 15 oz. broth (your choice)
- 4 Tbsp. maple syrup (or sweetener of your choice)
- 1 lime
- 3/4 cup Israeli couscous
- sea salt (to taste)
