I had an Omelette Soufflé once before and never had the guts to try and make one myself. This was super easy, with the most technical bit being the egg whites and ensuring that you know how to fold them in.
Proud to say this was perfect first time and the lightest omelette I have ever eaten. Only served with toast, but next time with ensure I have some nice ham or something more worthy then toast to serve with it.
