- 2 Tbsp. olive oil
- fresh parsley

Directions
- Whisk the eggs with the Mayonnaise and chopped parsley.
- Heat the oil in a non-stick frying pan and pour in the egg mixture. Cook until golden brown and cooked through.
- Fold in half and place on plate.
