- 1/2 cup vegetable shortening (softened)
- 1 1/4 lb. cream cheese (softened)
- 4 oz. softened butter
- 1 Tbsp. vanilla extract
- 3 lb. confectioners' sugar (sifted)
- 1 tsp. salt
- 1 Tbsp. lime (/Lemon Juice)
- 3 cake (layers of 8 or 9 inch Red Velvet, Chilled)
- fondant (Smoother)
- 3 1/2 cups AP flour (the original recipe calls for cake flour, but I used AP)
- 1/2 cup unsweetened cocoa (not Dutch process)
- 1 1/2 tsp. salt
- 1 cup canola oil
- 1 cup butter (softened)
- 2 1/4 cups granulated sugar
- 3 large eggs
- 6 Tbsp. red food coloring (or 1 teaspoon red gel food coloring dissolved in 6 tablespoons of water)
- 1 1/2 tsp. vanilla
- 1 1/4 cups buttermilk
- 2 tsp. baking soda
- 1 Tbsp. vinegar
