Directions

1. Set the oven temperature to 250 degrees F.
2. Rinse beans well. Cook for 30 minutes in a saucepan in enough water to cover beans. Drain well. Set aside.
3. Sauté onions rapidly in a little water, add tomato sauce, mustard, salt and pepper. Place beans in a large oven-proof dish or clay pot, add onion and tomato sauce mix and six cups of water.
4. Bake for six to eight hours, until most of the water has evaporated. Divide the cooked dish into five equal portions. (A fifth of the total represents a serving of 6 oz beans and 6 oz vegetables each.) Serve a portion with 2 oz of salsa and a salad.
