- 2 1/2 cups white beans (soaked overnight in water)
- 3 onions (large, cut in rings)
- 16 oz. tomato sauce (home-made)
- 1 tsp. prepared mustard (natural)
- 6 cups water
- salt
- pepper

Directions
- Set the oven temperature to 250 degrees F.
- Rinse beans well. Cook for 30 minutes in a saucepan in enough water to cover beans. Drain well. Set aside.
- Sauté onions rapidly in a little water, add tomato sauce, mustard, salt and pepper. Place beans in a large oven-proof dish or clay pot, add onion and tomato sauce mix and six cups of water.
- Bake for six to eight hours, until most of the water has evaporated. Divide the cooked dish into five equal portions. (A fifth of the total represents a serving of 6 oz beans and 6 oz vegetables each.) Serve a portion with 2 oz of salsa and a salad.
