- 4 whole herring (salted, cleaned and filleted, skin left on, My butcher did this part for me)
- 2 cups milk
- 1 1/2 cups water
- 1 cup white sugar
- 8 oz. white vinegar
- 2 tsp. ground allspice
- 2 tsp. yellow mustard seeds (whole)
- 1 tsp. caraway seeds
- 1 Tbsp. peppercorns (I used tri-color, but black will also work)
- 1 onion (small, sliced into thin rings)
- 1/4 cup dill weed (a nice sized hand full fresh)
- 2 bay leaves
- 2 inches fresh horseradish (piece, cut into big slices)
