This recipe comes from the Southern Living at Home cookbook. These cookies come out of the oven soft, but they become perfectly crispy as they cool!
Ingredients

- 1 cup butter (or Margarine)
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup dark brown sugar
- 2 eggs
- 2 1/2 cups unbleached flour
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. pure vanilla extract

Directions
- Beat the butter and peanut butter at medium speed with an electric mixer until creamy. Gradually add the sugars, beating well. Add the eggs and beat well.
- Combine the flour, soda, and salt in a medium bowl and add to the butter mixture, beating well. Stir in vanilla. Cover and chill 3 hours.
- Shape into 1-1/4 inch balls, placed 3 inches apart on an ungreased cookie sheet. Dip a fork in additional sugar; flatten the cookies in a criss-cross pattern. Bake at 375°F for 7-8 minutes. Remove onto wire racks to cool.
