I added a little grated fresh parmesan on top with the cheddar cheese. They came out super delicious!!!! So easy to make and not too dry either. They came out moist and cheesy and browned on top.

These were really really good the sauce was outstanding it was smooth and rich and everybody at my house like it. It was amazingly easy to put together's and look nice when they were done. Are used a white cheddar and they look just like regular scalloped potatoes. The ground red pepper gave them just a little bit of flavor. My grandchildren and their friends ate every last bite and that was the true test.

This recipe is a delicious, quick easy breezy way of changing your carb intake. I had only 2 types of cheeses to make up 1.5 cups, however, combining the cheeses was yummy!
