- 1 lb. candied fruit (mixed)
- 1 lb. candied cherries
- 1 lb. muscat raisins (seeded)
- 1 lb. raisins (seedless)
- 1 lb. currants
- 1 lb. pitted dates (cut in pieces)
- 1/2 lb. citron (diced, optional)
- 1 lb. walnuts (broken, or nuts of your choice)
- 1 cup rum (or brandy)
- 1/2 cup brewed coffee (double-strength)
- 2 oranges (large, grated peel and juice of)
- 1 lemon (grated peel and juice of)

Absolutely incredible - I haven't aged mine yet but I had a nibble and it is everything a good fruit cake should be. I couldn't find citron so I omitted it and I also couldn't afford all the muscatel raisins, so I subbed 127g with raisins and currants. I would strongly recommend you go to the effort of finding mace; it really adds some oomf to the cake. This is surely going to be my go-to recipe.
