- 1/2 cup red enchilada sauce (canned)
- 1/2 cup Real California sour cream
- 2 Tbsp. adobo sauce (from canned chipotle peppers)
- 1/2 Tbsp. canned chipotle (minced, optional for heat)
- 8 oz. Real California Oaxaca cheese (shredded)
- 8 white corn tortillas (or yellow corn, or flour, small)
- 2 Tbsp. olive oil (divided)
- 1/4 tsp. Tajin Seasoning (divided)
