Description
Instead of shaping lots of individual cookies, form just one big one in a skillet! This warm spiced oatmeal raisin skillet cookie is the perfect end to a cozy winter meal. The recipe is a Yummly original created by Sara Mellas.

- nonstick cooking spray
- 1/2 cup unsalted butter (softened)
- 1/3 cup light brown sugar (packed)
- 1/4 cup granulated sugar
- 1 tsp. vanilla extract
- 1 large egg
- 3/4 cup all purpose flour
- 1/2 cup quick cooking oats
- 1/3 cup old-fashioned rolled oats
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1/2 tsp. baking soda
- 1/2 tsp. salt (scant)
- 2 oz. raisins (2 oz. is about 1/2 cup)
- 1 oz. chopped walnuts (1 oz. is about 1/4 cup)

Directions
- Preheat the oven to 350°F.
- Spray an 8-inch cast-iron skillet with nonstick cooking spray.
- Place the softened butter, brown sugar, granulated sugar, and vanilla extract in a large bowl. Use a mixer to cream together the butter and sugars on medium speed until pale and fluffy, about 1 minute. Add the egg and continue to beat on medium speed until light and fluffy, 30 seconds to one minute.
