These have become my signature cookie. So flavorful and chewy. I add walnuts and make them super big. Soooo good

Good. Did not have 2 hours to refrigerate dough so the cookies were very flat. Next time I would add another egg so I would not have to refrigerate as long... or freeze it instead.

These are fabulous. I made changes by cutting the oatmeal to 2 cups adding 1/4 cup of hemp seed, 1/4 cup flax meal, 1/4 cup chia seed and adding 4oz of applesauce, just to make it a little guilt free, I also changed white sugar to Splenda. I also use 1 cup all purpose and 1/2 cup other flours like amaranth, millet, etc. I am a bit of a flour groupie. Yummy as originally written, slightly more nutritious with changes.
