- 3 1/2 cups old fashioned oats
- 5 cups flour
- 1 wheat
- 3 Tbsp. sugar
- 3 Tbsp. baking powder
- 1 Tbsp. salt
- 1 Tbsp. baking soda
- 1 cup vegetable oil (I use olive oil- not extra virgin, just regular, or I use expeller pressed canola oil)
- 1 cup pancake mix
- 1 cup buttermilk (original recipe calls for 1 cup- I start with the lesser amount because I like my batter thicker- but if you use all spelt flour you may need a little extra buttermilk to thin batter.)
- 1 egg
- 1 tsp. vanilla extract
