  • 8 tablespoons butter (at room temperature)
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup whole wheat self rising flour
  • 1/2 cup dried cranberries
  • 1/3 cup white chocolate chips

    Directions

    1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
    2. Using a wooden spoon, mix butter and sugar in a large bowl. Add egg and vanilla; mix well. Add oats, flour, cranberries and chocolate chips; mix until combined. Drop by tablespoons onto prepared pans, flattening slightly.
    3. Bake 12-15 mins or until golden. Cool on baking sheets 1 min. Remove to wire racks; cool completely.

    I used a bit less white chocolate (was running out) and 2/3 cup sultanas instead of cranberries (I didn’t have cranberries). They came out lovely and sweet; I reckon one could use even less sugar and sultanas and they’d be just as good. Thank you for the recipe :)
