- 1 1/2 cups buckwheat flour
- 3 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/4 cup butter (melted and slightly cooled)
- 1/4 cup coconut oil (melted and slightly cooled)
- 4 large eggs (at room temperature)
- 2 Tbsp. honey (or maple syrup)
- 2 tsp. vanilla bean paste
- 1 1/2 cups buttermilk (at room temperature)
- rhubarb (or fruit of choice like strawberries, apricots, plums, apples, etc)
- 3 cups rhubarb (diced, or fruit of choice)
- 3/4 cup cane sugar
- 2 Tbsp. water
- 1 cup whipping cream (chilled)
- 2 Tbsp. powdered sugar
- 2 tsp. vanilla bean paste (paste is recommended for a stronger, superior flavor and the visible vanilla flecks)
