- 1.5 kilograms root vegetables (selected, potatoes, pumpkin, yam, sweet potatoes, cassava, turnips,parsnip, swede peeled and cut into 1½ inch chunks, steamed until cooked, cooled)
- 1 tsp. hot pepper sauce (West Indian)
- 2 tsp. turmeric
- 1 tsp. dried thyme
- 400 mL coconut milk
- 1/4 whole nutmeg (finely grated)
- 125 grams green beans (tops and cut into 2 inch lengths, blanched and cooled)
- 2 sprigs fresh thyme leaves (removed)

- 1 Tbsp. fresh coriander (finely chopped)
