- 2 Tbsp. olive oil
- 1 clove (garlic - peeled and very finely chopped)
- 3 rosemary leaves (fresh, very finely chopped)
- ground black pepper (a good pinch of freshly)
- zest (a lemon, keep the lemon for later)
- 2 skinless chicken breast fillets (nice fat)
- 4 rashers (smoked streaky bacon)
- 2 sprigs rosemary
- 1/2 lemon (the lemon you used to make the marinade will be fine)
- 3 pineapple (rings of, cut into smallish dice, I used tinned since that's all I had but fresh pineapple would be all the better)
- 1/4 cucumber (sliced into four lenghways - seeds removed and then cut into small dice.)
- 1/2 seeds (a green bell pepper -, removed and cut into small dice)
- 1/2 seeds (a red bell pepper -, removed and cut into small dice)
- 2 spring onions (sliced diagonally)
- 1 fresh red chilli (large mild or medium heat, top and tailed, seeds removed and very finely chopped)
- 1/2 tsp. fish sauce (nam pla available from any good supermarket)
- 1 lime
- 2 tsp. caster sugar
- fresh mint leaves (a couple of)
