I will NEVER soak beans for hours again! This was great! I left out the bacon only because it was frozen, so I put in about 1/2 a tablespoon of bacon fat for flavor. I cut the recipe in half as well as the cooking time but it wasn’t quite done. I added about another 10 minutes, and it was perfect.

I didn’t have coriander so I left it out. Instead of bacon I had a very meaty leftover ham bone. I added a small can of medium green chilies. After cooking, I added a can of drained rotel tomatoes with green chilies. Cooked for 60 minutes. Turned out a-maz-ing.

Loved it!! Great flavor! First time making this, so maybe next time I’ll try some variations suggested here. Thumbs up! This recipe was for pinto beans, not black beans.

Rating would have been higher except when I pulled up the directions it was for black beans, not Pinto beans. Ended up having to cook for an additional 15 minutes. Flavor was good except I hsd no coriander so I added a can of fire roasted tomatoes and a small can of hatch green chili.
