- 1 can black olives (drained, 6 oz. can)
- 1 jar roasted red peppers (drained and cut into short strips, 12 oz. jar)
- 3 zucchini (about 8 inches long)
- 1/2 cup vinaigrette (low-sugar or sugar-free, or italian dressing)
- salt and ground black pepper (to taste)
- 1 cup Parmesan cheese (coarsely-grated or freshly-grated, more or less to taste)
