- 1 lb. pepper turkey (High Quality Deli)
- 4 slices swiss cheese
- 8 slices rye bread (New York Style, From Trader Joe’s)
- 1 cup sauerkraut (Bubbies Old Fashioned)
- Dijon mustard
- mayo
- 365 pitted black olives
- pickles (Cornichon)
- potato chips (Low Salt)
- Bubbies Sauerkraut

Directions
- In this version of a Reuben, lightly toast the bread instead of spreading butter on it and grilling it, which for me causes a heavy, greasy taste and feel. So much healthier and tastes great.
- Spread a little mayo and Dijon mustard on each slice of bread and pile one slice high with the pepper turkey. The pepper on the turkey adds a nice kick.
- Press the liquid out of about 1/4 cup of Bubbies Old Fashioned Sauerkraut so it is as dry as possible and cover the turkey with it.
