  • 1 pound pepper turkey (High Quality Deli)
  • 4 slices swiss cheese
  • 8 slices rye bread (New York Style, From Trader Joe’s)
  • 1 cup sauerkraut (Bubbies Old Fashioned)
  • Dijon mustard
  • mayo
  • 365 pitted black olives
  • pickles (Cornichon)
  • potato chips (Low Salt)
  • Bubbies Sauerkraut

    Directions

    1. In this version of a Reuben, lightly toast the bread instead of spreading butter on it and grilling it, which for me causes a heavy, greasy taste and feel. So much healthier and tastes great.
    2. Spread a little mayo and Dijon mustard on each slice of bread and pile one slice high with the pepper turkey. The pepper on the turkey adds a nice kick.
    3. Press the liquid out of about 1/4 cup of Bubbies Old Fashioned Sauerkraut so it is as dry as possible and cover the turkey with it.
