- 1 cup flaked coconut
- 1/2 cup pecans
- 1/2 cup pitted dates (about 5-6 dates)
- 1/4 tsp. kosher salt
- 2 cups raw cashews (soaked for at least four hours or preferably overnight)
- 1/2 cup coconut milk (canned, shaked)
- 1/4 cup coconut oil (melted and cooled, use refined coconut oil if you want no coconut flavor)
- 1/3 cup pure maple syrup
- 2 Tbsp. fresh lemon juice
- 1 tsp. vanilla extract (or ¼ teaspoon vanilla bean powder I prefer the powder!)
- 2/3 cup dried cherries (freeze-)
- 3 oz. dark chocolate (finely chopped)
- 1/4 cup coconut milk (canned)
