Description

The other day I was talking with my sister in law (Niquelle, hence: the name of the recipe), and as usual I brought the subject of food (one can call me mono-themed). From one thing to the other she shared a picture of what she was making for dinner. The picture showed walnuts being caramelized; next she tells me: “I’m making a beet and goat cheese salad”; my immediate response was: “I want the recipe”.

She kindly then texted me the whole recipe, as well any possible variations that I may want to do to it. She is a busy mom of two sneaky-monsters, so I really valued her texting. I did change some minor things on the recipe, such as frying the cheese and roasting the beets.

  • 250 grams leaf lettuce (green mini)
  • 250 grams arugula
  • 150 grams beets (roasted)
  • goat cheese (200r., cut into 3 cm rounds)
  • 1 egg (beaten)
  • 100 grams ap flour
  • 100 grams walnuts
  • 2 tablespoons brown sugar (to candy the walnuts)
  • 1 tablespoon olive oil
  • salt
  • juice (a lemon)

    Directions

    1. Peel and cut in wedges the beets, seasoned with salt and pepper, drizzle a bit of olive oil and bake until tender.
    2. In a pan toast walnuts and the sugar until it melts and it covers walnuts. Set aside to cool.
    3. Make an egg wash for the cheese and breaded with the flour and freeze until you are ready to fry. Fry on hot oil on all sizes and set on rack to cool.
    4. In a bowl mix: salt, pepper, lemon and oil to create simple vinaigrette. Add the greens and the arugula mix well and plate with: beets, cheese and walnuts.
