Nicoise Salad with Grilled Tuna

  • 1 pound tuna steaks
  • 1 tablespoon olive oil
  • 14 ounces artichoke hearts (drained, halved)
  • 1/2 pound plum tomatoes (halved)
  • 1/4 pound green beans (trimmed, halved lengthwise, blanched)
  • 2 ounces baby greens (mixed)
  • 8 new potatoes (cooked, thinly sliced)
  • 1/2 cup pitted black olives
  • 1 red onion (thinly sliced)
  • 1/2 cup basil leaves
  • 1 dressing
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon maple syrup
  • 3 hard-boiled eggs (large, quartered)

    Directions

    1. Preheat charcoal grill on high. Brush both sides of tuna with olive oil. Season to taste. Grill tuna for 2 mins each side or until cooked, but still pink in the middle. Transfer to a plate. Set aside for 10 mins to cool slightly. Break into large chunks.
    2. Combine, artichokes, tomatoes, green beans, salad greens, potatoes, olives, onion and basil in a serving bowl.
    3. In a bowl, whisk together all dressing ingredients. Season to taste, add to serving bowl and toss. Top salad with tuna and egg to serve.
