  • 1 tablespoon sunflower oil
  • 2 boneless skinless chicken breasts (large, about 225g/8oz each, minced up in a food processor)
  • ground black pepper
  • sea salt
  • 2 tablespoons fish sauce
  • 1 lime juice (only)
  • 1 teaspoon caster (granulated or soft light brown sugar)
  • 3 spring onions (finely chopped)
  • 1/4 cucumber (finely diced)
  • 2 red chillies (finely sliced, seeds removed for less heat if preferred)
  • 1 centimeter fresh root ginger (/½in piece, peeled and finely chopped)
  • 1/2 bunch coriander leaves (and stalks roughly chopped, about 2 tbsp)
  • 1/2 bunch mint leaves (only, ripped)
  • dry roasted peanuts (1 handful salted, but not, about 50g/1¾oz)
  • 12 lettuce leaves (largish crisp iceberg, cup-shaped are best)
