- 1 Tbsp. sunflower oil
- 2 boneless skinless chicken breasts (large, about 225g/8oz each, minced up in a food processor)
- ground black pepper
- sea salt
- 2 Tbsp. fish sauce
- 1 lime juice (only)
- 1 tsp. caster (granulated or soft light brown sugar)
- 3 spring onions (finely chopped)
- 1/4 cucumber (finely diced)
- 2 red chillies (finely sliced, seeds removed for less heat if preferred)
- 1 cm fresh root ginger (/½in piece, peeled and finely chopped)
- 1/2 bunch coriander leaves (and stalks roughly chopped, about 2 tbsp)
- 1/2 bunch mint leaves (only, ripped)
- dry roasted peanuts (1 handful salted, but not, about 50g/1¾oz)
- 12 lettuce leaves (largish crisp iceberg, cup-shaped are best)
