- 1 Tbsp. grated lemon zest (finely)

- 2 large egg yolks
- 1 tsp. vanilla
- 1/4 tsp. vanilla powder (ground, optional)
- 1/2 cup fresh lemon juice (about 3 to 4 medium to large lemons)
- 1 1/2 cups sugar
- 1 Tbsp. grated lemon zest (finely)
- 3 whole eggs
- 2 egg yolks
- 1 stick butter (cold, cut into pats, keep chilled)
- 1/8 tsp. salt
