    I had only a 2.25lb roast. I started in in my sous vide for about an hour. Then I switched to a roasting pan in the oven at 425 for 15 min, then 350 for about 25-30 minutes until meat thermometer registered 140. After resting 15 minutes it was a perfect med rare. Very tender and juicy.
