- 1/3 cup celery (diced very small)
- 4 Tbsp. butter
- 1/2 cup all purpose flour
- 1 tsp. fresh thyme
- 1/2 tsp. white pepper
- 2 qt. turkey stock (see our homemade recipe here)
- 2 lb. red potatoes (peeled and diced into half inch pieces)
- 2 lb. turkey meat (diced into bite sized pieces, white and dark meat)
- 1 qt. half & half
