- 1 1/3 cups oyster crackers (finely crushed, 2/3 cup when crushed; or, 17 saltine crackers, finely crushed)
- 1 tsp. ground black pepper
- 1 tsp. salt (plus more to taste)
- 3 Tbsp. fresh thyme leaves (or 1 tablespoon dried thyme leaves)
- 1 lb. white fish fillets (mild, cod, sole, haddock, etc.)
- 12 oz. evaporated milk

Very good and easy. Added scallops but it would work with almost any seafood.

Awesome! I’d cut back the salt, personal preference, and I used 18% coffee cream instead of condensed milk. Will definitely make this again.
