- 5 red chillies (dried long, trimmed, deseeded and soaked in water for 1 hour)
- 65 mL water
- 1 pinch sea salt
- 800 mL coconut cream
- 2 sticks cassia bark
- 3 cardamom pods (seeds of)
- 1 stalk lemongrass (trimmed, bruised and cut into half)
- 2 kaffir lime leaves
- 1 kg chuck steak (trimmed and cut into 5cm cubes)
- 1 knob ginger (small ,cut into 1cm slices)
- 1/4 cup peanuts (roasted)
- 2 potatoes (pinkeye or kipfler, peeled and cut into 1cm cubes)
- 2 Tbsp. palm sugar
- 2 Tbsp. fish sauce
- 50 mL tamarind water
- shallots (crispy)
- steamed rice
- limes
- coriander leaves (to serve)
