- grated Parmesan (finely, to serve)
- green salad (to serve)
- 6 fresh bay leaves
- 1 tsp. juniper berries
- 1/2 tsp. black peppercorns
- 2 sprigs fresh rosemary
- 6 garlic cloves (finely chopped)
- 500 mL cabernet sauvignon
- 180 mL olive oil
- 1 brown onion (finely chopped)
- 3 cloves garlic (crushed)
- 2 1/2 Tbsp. tomato paste
- 1 Tbsp. plain flour
- 750 mL chicken stock (plus a little extra if necessary)
- 250 mL tomato passata

- 750 grams brown mushrooms (large swiss)
- 20 grams butter (melted)
