- 1 cup dry white wine
- 2 cups homemade beef stock (Homemade Beef Stock)
- 1 cup tomatoes with juice (canned, seeded and crushed)
- 1 Tbsp. fresh rosemary (chopped, or 2 teaspoons dried)
- 2 tsp. fresh thyme leaves (or 1 teaspoon dried)
- 1 bay leaf
- 4 oz. pearl onions (about 24)
- 16 baby carrots (or 4 large carrots)
- 1/2 lb. turnips (baby, or 2 large turnips)
- 3/4 cup peas
- 1/2 lb. string beans (young, or haricots verts, stems trimmed)
- mashed potatoes (Perfect)
- fresh chervil (for garnish, optional)
