  • 1/2 cup coconut sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup dairy-free milk (I used almond or other milk of choice)
  • 1/4 cup coconut oil (melted, olive oil, or other oil of choice)
  • 1 1/2 teaspoons vinegar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup banana (mashed ripe)
  • 1/2 cup pineapple (crushed or finely chopped, juice drained)
  • 1/2 cup shredded unsweetened coconut (finely)
  • 1 can coconut cream (or full-fat coconut milk, refrigerated overnight, I bought the one from Trader Joe's. About 1 cup firm cream)
  • 8 ounces dairy-free cream cheese (or regular cream cheese)
  • 4 tablespoons honey (coconut syrup, or other sweeter of choice, add more or less to taste)
  • 1/2 teaspoon vanilla extract
  • 1 fresh pineapple
