- 2 lb. pork secreto
- 2 Tbsp. lemon grass (thinly sliced)
- 1 Tbsp. black pepper (cracked)
- 1 Tbsp. soy sauce
- 3 lime
- 3 Tbsp. fish sauce
- 2 tsp. sugar
- 1 Tbsp. Thai roasted chili powder
- 1/2 cup thai basil
- 1/2 cup cilantro
- 1/2 cup mint
- 1/4 cup green onions
- 1/2 cup shallots (sliced thin)
- 3 Tbsp. roasted rice powder (Thai or jasmine rice**)

Directions
- 1. Mix the lemongrass with the pepper and soy sauce and spread evenly over pork and let marinate for 1 hour
- 2. Grill pork to medium rare, medium and let rest.
- 3. Mix lime juice, fish sauce, sugar, Thai chili powder together to form dressing
- 4. Mix basil, cilantro, mint, green onion, and shallots together and combine with “dressing”
- 5. Put salad on top of pork and pour liquid over pork. Garnish with rice powder.
