- 1/4 cup oil (achuete, I didn’t have an oil version, so I used the powder one, which can easily be purchased at a Filipino grocery store in your area)
- 3 garlic cloves (finely chopped)
- 1 stalk lemongrass (trimmed and finely chopped, I did not have this on hand, so I substituted with a lemon-pepper seasoning)
- 3 Tbsp. kalamansi (freshly squeezed, or regular lime juice)
- 2 Tbsp. red wine vinegar (or coconut vinegar, Can also be purchased at a Filipino grocery store. This is what I used.)
- 1 Tbsp. sugar
- 1 Tbsp. salt (plus extra for the skin)
- 1 tsp. fresh ginger (finely chopped)
- 1/4 tsp. ground black pepper (freshly)
