- 1 tsp. turmeric powder

- 1/2 tsp. coriander seeds

- 1 cup coconut milk (low-fat) (250 mL, is good too)
- 2 cups water (500 mL)
- 1 tsp. vegetable stock (granules)
- 1 Tbsp. cornflour (/cornstarch, mix first into a paste with 6 Tbsp water)
- 2 tsp. teriyaki sauce (10 mL)
- 1 Tbsp. dark soya sauce (15 mL)
- salt (to taste)
- 1 eggplant (medium sized, /aubergine)
- 1 sweet potato (medium sized)
- 4 slices pumpkin
- 1 cup flour
- 1 cup water (250 mL)
- 2 cups dried breadcrumbs
