I fixed this last night, and it was tasty, but not the recipe I was looking for that I've made for years but lost the recipe in a house fire recently. Next time (so there's enough for dinner for 2 of us the 2nd night) I'll increase the rice to 2 cups, water to 4 cups, 2 stalks celery, bell pepper is optional, and I always use brown rice for more nutrition.
