- 3 1/2 cups old-fashioned rolled oats (organic, not instant or quick cooking)
- 1 1/2 cups chopped nuts (roughly, I like using a mix of half pecans, half almonds)
- 1/2 cup oat bran
- 1/2 cup flaxseeds (coarsely ground toasted, you can find toasted flaxseeds at Trader Joes or online. Or you can toast raw flaxseeds for a few minutes in a dry hot skillet. Grind them in a coffee grinder, blender or with a mortar and pestle)
- 2 Tbsp. flaxseed (whole toasted, optional)
- 1/3 cup pepitas (raw unsalted, pumpkin seeds)
- 1/3 cup unsalted sunflower seeds
- 1/2 tsp. canela
- 3/4 tsp. kosher salt
- 1/2 cup coconut oil (unrefined)
- 1/2 cup maple syrup (real)
- 2 Tbsp. coconut sugar (optional, or substitute brown sugar)
