- 1 carrot (large, peeled and cut into fine strips)
- 1 red pepper (diced)
- 1 bunch spring onions (small, washed and very finely sliced)
- 1 red chilli (small, finely sliced, you can omit this but I like a little kick of Chilli)
- 6 cloves garlic (peeled and crushed)
- 3 cms ginger (piece, peeled and finely chopped)
- pinches Chinese five-spice (A generous pinch)
- 2 cloves
- 1 Tbsp. corn flour (approximately)
- 100 mL chicken stock (quality)
- 2 Tbsp. olive oil
- 2 Tbsp. soft brown sugar
- 2 Tbsp. sherry vinegar
- 2 Tbsp. rice wine
- 1 Tbsp. tomato paste
- 1 Tbsp. dark soy sauce
- bunches coriander (small bunch. to Garnish, optional)
- 500 grams pork loin (skin removed, washed and diced)
- 2 egg whites
- 1 lemon (Juice of 1 Lemon)
- 60 grams cornflour
- 1 tsp. sea salt
- 1/4 tsp. cayenne pepper
- 1.5 liters vegetable oil
