- 1 lb. bulk Italian sausage (mild, casings removed)
- 1/2 lb. bacon
- 30 oz. kidney beans (drained)
- 15 oz. pinto beans (drained)
- 15 oz. black beans (drained)
- 56 oz. diced tomatoes with juice
- 6 oz. tomato paste
- 1 yellow onion (large, chopped)
- 1 red bell pepper (seeded and chopped)
- 2 cups beef stock (see Notes)
- 3 Tbsp. chili powder
- 1 Tbsp. worcestershire sauce (make sure to find gluten-free if necessary, or leave it out)
- 1 Tbsp. minced garlic
- 1 Tbsp. dried oregano
- 2 tsp. ground cumin
- 1 tsp. dried basil
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. paprika

This chili is amazing. I prepared it for a group of friends and they all loved it!

This was easy to make and tasty, I’m a novice cook so I will definitely try making it again- I had a few small snafus. I would definitely get mild sausage rather than spicy, and add a can of green chili’s instead. I burned the bacon, and I thought it would be good to use canned “chili beans” since I didn’t have the specified beans, but I think the can sauce clashed with mine. I would also cut down on the oregano as well.
