- 1/4 cup extra virgin olive oil
- 1/4 cup olive oil
- 4 cloves garlic (minced)
- 5 plum tomatoes (peeled, seeded and sliced into thin strips)
- 4 lb. mussels (fresh, steamed until open, liquid reserved and strained and removed from the shells)
