- 2 Tbsp. butter
- 1/2 lb. mixed mushrooms (wiped clean with a damp cloth and thinly sliced)
- 1 Tbsp. shallot (minced)
- 1 pinch chopped fresh thyme (dried thyme substitutes just fine)
- 2 Tbsp. dry sherry
- 1/2 cup chicken stock (good, or if you're really good, which I'm generally not, you'll make some mushroom stock)
- 1/4 cup creme fraiche
- 2 large eggs
- 2 cups yolks
- 1 white vinegar (splash)
- 2 slices brioche
- 2 tsp. butter (melted)
- 1 tsp. chives (chopped)
- 1 tsp. chervil (chopped)
- sea salt
- ground black pepper
