Description
Chicken liver is high in both iron and zinc, but does not often see the dinner table as it is thrown out with the other gizzards. This recipe, however, features chicken liver in a creamy dip that makes a great spread for crackers or toast. Mushrooms and the chicken livers are simmered in a sherry sauce and then mixed with crushed nuts and cream cheese with the end result being a savory dip that makes a great appetizer.

- 1 Tbsp. olive oil (plus an extra drizzle)
- 350 grams mushrooms (pine, sliced)
- 3 garlic cloves (diced)
- 150 grams chicken livers
- 1 tsp. ras el hanout (Moroccan spice mix)
- 1 Tbsp. dry sherry
- salt
- ground black pepper
- 200 grams cream cheese
- 30 grams nuts (crushed)

Directions
- In a large pot, heat up 1 tablespoon of olive oil. Add the mushrooms, lower the heat, and simmer 10 minutes.
- Add the garlic, chicken livers, and ras el hanout. Continue to simmer on low heat until the livers are cooked through.
- Add the sherry and continue cooking until the alcohol has evaporated out.
