- 1 cup dried mushrooms (assorted, soaked in 2 cups of boiling hot water for 1 hour)
- 3 konbu (x six inch piece of, wiped with a damp cloth)
- 3 inches fresh ginger (finger of, sliced into 4 lengthwise slices)
- 3 cups water
- 3 Tbsp. soy sauce
- 1 Tbsp. sake
- 1 Tbsp. mirin
- 4 slices slab bacon (smokey, roasted pork belly or pancetta, about two inches long and 1/4 inch thick)
- 2 Tbsp. vegetable oil
- 3 cups fresh mushrooms (assorted, portobello, shiitake and crimini, 1/4 inch thick slices)
- 1 Tbsp. garlic (fresh, minced)
- 1 tsp. fresh ginger (minced)
- 1/2 tsp. sugar
- 2 Tbsp. yellow miso
- 1 handful cilantro
- 1/4 cup chives (or green onions, chopped into batons)
- 1 Tbsp. sake
- 2 tsp. red wine vinegar
- 2 tsp. soy sauce
- 1 lb. noodles (dried, angel hair pasta, chuukasoba or fresh ramen, cooked and cooled according to the directions on the box)
