This is very tasty and very easy to make. I added some sriracha over the toast and it was heavenly. I poached the eggs in the microwave and it worked better than expected!

Delicous! I couldn't get enough. I need to keep mushrooms and spinach in my fridge at all times now
2nd time I veganized it. I omitted the egg, seasoned it with lemon pepper and spritz of lime. Then put it on toast. I used coconut oil instead of butter to toast the bread. My children preferred this version better.
