    This is a really flavorful. My family loves kale and I love quinoa, so this is a nice mixture of the two. The mushrooms add another layer of flavor as well. I made this as a side to baked cod.used an entire bag of kale from Trader Joes, so my version is more colorful! My kids devoured it!!!!
