- 1/4 cup brummel & brown spread
- 8 oz. sliced mushrooms (cremini, shiitake, and/or white)
- 1 onion (medium, thinly sliced)
- 1 clove garlic (finely chopped)
- 6 eggs (slightly beaten)
- 1/2 tsp. fresh thyme leaves
- 1/8 tsp. ground black pepper

Directions
- Melt Brummel & Brown® Spread in 12-inch nonstick skillet over medium-high heat and cook mushrooms and onion, stirring occasionally, 5 minutes or until tender. Stir in garlic and cook 30 seconds. Reduce heat to low and stir in eggs, thyme and pepper. Lift set edges of omelet with spatula, tilting pan to allow mixture to flow to bottom. Cook covered over low heat 5 minutes or until golden and set. Season, if desired, with salt.
