- 3 spring onions (scallions, thinly sliced, white + green parts kept separate)

- 1 red chilli (long, de-seeded and finely chopped)
- 1 coriander (cilantro plant, reserve leaves to garnish, optional)
- 1 Tbsp. Shaoxing cooking wine (or dry sherry* see headnotes)
- 1 Tbsp. gluten-free soy sauce (or tamari)
- 1/2 tsp. sesame oil
- raw sugar (a good pinch unrefined)
- ground white pepper (to taste)
- 4 slices firm tofu (pan-fried, finely diced)
